What is matcha?

Matcha is a Japanese green tea powder made from ground whole tea leaves, unlike regular loose-leaf tea where the leaves are only steeped in water. Since you consume the whole leaf, the flavor is more concentrated and the content of caffeine and antioxidants is higher.

How do I prepare matcha?

Sift one to two teaspoons of matcha powder into a bowl, pour in hot (not boiling) water and whisk quickly in zigzag motions with a bamboo whisk (chasen) until a light foam forms. If you want to make a matcha latte, then stir in hot or cold milk.

What is the difference between ceremonial and culinary matcha?

Ceremonial matcha is of a higher quality with a milder, sweeter taste and is intended to be drunk plain. Culinary matcha has a stronger, more bitter taste and is better suited for baking, lattes, or other recipes where the matcha is mixed with other ingredients.
